Price and expenditure elasticities at retail level for 11 fresh fruits and 10 fresh vegetables were estimated by employing a composite demand system approach and using annual data. Most fresh fruits and vegetables were found to respond significantly to changes in their own prices but insignificantly to changes in total expenditures. The demand for fresh fruit group appeared to have had a clear upward trend since 1973. However, no significant trends were found in the demands for individual fresh fruits or vegetables. The study partially incorporated the interdependent demand relationships between fresh fruits (vegetables) and all other commodities, yet effectively avoided the problem of insufficient degrees of freedom. |

The food habits and dietary patterns of American consumers are changing and they are increasingly demanding food products that possess certain attributes relating to how the food was produced or processed. The objectives of the study are to analyze household purchase of fresh tomatoes and to determine the magnitudes of the price premium paid for the organic tomatoes by estimating a hedonic price model. The objective of this research was to analyze the demand patterns of Hispanic households for meats in comparison with other ethnic groups using data from the 1998 Consumer Expenditure Survey. A system of demand equations of the LinQuad form were estimated for ten meat products using an incomplete system of censored equations. Hispanic households showed a clear preference for beef. Price, income and household size elasticities were estimated for each meat product by ethnic group. The demand for ground beef was the most income inelastic product regardless of ethnicity. Household size had a positive effect on the probability of consuming a particular meat product but a negative effect on actual item expenditures. |

The study identifies differences in consumer characteristics and the selection of the type of a retail outlet in pecan purchases. Within the framework of utility maximization, an empirical model is specified and estimated using multinomial logit. The estimation is based on data collected through a nationwide survey. Calculated marginal probabilities show the importance of age, household income, and household size among the important consumer characteristics that influence the selection of a retail outlet. Employment and the timing of pecan purchases also influence the use of a specific type of retail outlet. The study uses primary data collected from a survey conducted in Georgia to analyze consumer preferences for testing and certification of fresh produce and consumers' willingness to pay for fresh produce that is certified as free of pesticide residues (FPR). An ordered probit model was estimated to identify the impacts of various exogenous variables on the probability of consumers' willingness to pay for a number of alternative price premiums. The results indicate that consumers' willingness to pay differs with respect to a number of factors. The study concludes that most of the consumers recommend testing and certification, but they oppose large price markups for certified-FPR fresh produce. |

Demands for beef products are investigated using the U.S. Department of Agriculture's 1987-88 Nationwide Food Consumption Survey data. The censored translog demand system is estimated with full-information and simulated maximum-likelihood procedures. These procedures represent different approaches to evaluation of multiple probability integrals in the likelihood function, but produce very similar parameter and elasticity estimates. Findings suggest sociodemographic variables play important roles in the demand for beef, and that demand for different cuts of beef should be treated differently. |
